Family Style Appetizer: Tomato and Feta Bruschetta

When all of the family is in town, we always have a big homemade dinner. We all have our favorite foods that are generally represented at the table. However, I am always asked to bring one thing…Tomato and Feta Bruschetta. This dish came about years ago during an attempt to take two recipes and merge them together to match my family’s tastes. Since then I have worked on perfecting this family fave and I believe this is that perfect recipe.

Fresh, ripe tomatoes combined with some of our favorite flavors: garlic, onion, balsamic vinegar and feta. This is a very flavorful and addictive family style appetizer that we will eat at dinner and then again for a snack. Grab some mints and make plenty…it usually goes pretty quickly!

Tomato and Feta Bruschetta

Ingredients

2 Cups Tomatoes, diced

2 Tbsp Green onions, sliced thin with green parts

1 Clove Garlic, minced

1 Tbsp Olive Oil

1/2 tsp Salt

1/4 tsp Black Pepper

1 Tbsp Basil, minced

2 Tbsp Balsamic Vinegar

8 oz Feta, crumbled

1 Loaf French bread

1 Tbsp Olive Oil

1 Clove Garlic, peeled and cut in half
Directions

  1. Combine tomatoes, green onions, minced garlic, 1 tbsp olive oil, salt, pepper, basil, balsamic vinegar, and feta in medium sized bowl. Cover and marinate at least one hour.
  2. When ready to serve, preheat broiler.
  3. Slice French bread into 1/4 inch slices. Brush with 1 tbsp olive oil. Broil until lightly browned, about 3 minutes.
  4. Remove bread and immediately rub with the cut side of garlic onto the hot bread.
  5. Serve bread alongside the tomato mixture, family style. Keep some mints in your pocket!
