Greek Spiced Chicken Kebabs

My sister was recently traveling and brought me back a gift…uniquely shaped skewers. They are kind of elegant and shaped like an anchor of sorts. It took me about a month to find the perfect first dish to skewer with my new toys but I finally decided on Greek Spiced Chicken Kebabs. I didn’t want to make the standard caprese skewers or pineapple, chicken and grilled veggies…I knew it had to be something I hadn’t tried before. In the end, these kebabs were pretty tasty. They were great with some eggplant and a greek salad…and some smooth red wine, of course. The leftovers were perfect on a salad for lunch the next day too! Give these very easy, very delicious Greek Spiced Chicken Kebabs very soon.

Greek Spiced Chicken Kebabs Recipe


1/2 Cup Olive oil

1/2 Medium onion, small dice

3 Cloves Garlic, chopped

1 Tbsp Fresh rosemary, minced

1 Tbsp Fresh thyme, minced

1 Tbsp Fresh oregano, minced

2 Lemons, juiced

2 lb Chicken breasts, cut into bite size pieces

  1. In a large bowl, mix all ingredients except chicken. Add chicken and toss well. Cover and refrigerate for 4-8 hours, or overnight.
  2. Preheat indoor or outdoor grill over medium high heat.
  3. Brush the grill with olive oil very lightly. Place chicken on grill. Do not pour the marinade on the grill.
  4. Cook chicken until browned on both sides and cooked through, about 10-15 minutes.

  1. Super 5 star recipe! I made this tonight to go with Greek Potatoes, and made a Tzatziki Sauce to go with the chicken, wonderful! I cooked it in the george foreman grill. The chicken got the nice grill marks that compliment this recipe, can’t wait to get out the real grill for this recipe this summer!
